He was often cast as the hero/leading man when he was younger, mainly because he was so handsome. As he grew older and directors more willing to cast him in character roles, he played more villians (or at least more complicated figures).
On Golden Pond is a favorite, he and Julie did it as a live broadcast on CBS. It's on youtube. Muhammad Ali's Greatest Fight was an HBO original, CP played one of the Supreme Court justices ruling on Ali's right to stay out of the Vietnam war due to his religious beliefs. Barrymore is a one man stage show that was filmed by PBS. Outstanding. Must Love Dogs is a romantic comedy, he plays Diane Lane's father and is wonderful. Truly, as I said previously, anything he is in is worth watching at least once because he always turns in a tremendous performance.
