So - with thanks to lisab1991 for the screencaps link, I went back and studied one of my favorite moments (it's my avatar!), to look for where G gives M the once-over after the puppet show. This is the best I could do and I think it's pretty good. At first I thought it was a little later, but don't think so now. and also, for the Walled Garden, I really super-analyzed this moment, when it's clear that he finally agrees to sing because M says, in her winsome way, "please?" He's thinking she's lovely . He suspects that she doesn't even know just how appealing she is - that's part of the attraction!. He's admired her pluck and strong heart for a while but maybe this is the first time he really notices how alluring she is, that she's a grown woman and not just an overgrown girl. He tells himself to put those thoughts aside, for heaven's sake, she's pledged to God. But she's been sending some pretty inviting looks his way, even though he knows she's kind of an innocent and probably doesn't realize the effect she's having on him. He can't help thinking for a moment what it would be like to kiss her, what her hair would feel like in his hands, what she would taste like. If she's even ever been kissed. He can almost imagine what it would be like to hold her slender body in his arms. He's only human, after all. It occurs to him that he hasn't been this tempted in a long time. It's disturbing. Between that and Elsa's sudden intervention, his fingers begin to twitch uncontrollably.
That's what I got. But I would love others' interpretations too.

i'll try... two words: nether regions.
elsa: beautiful, alluring, doesn't like her hair mussed, smells like an ashtray. safe (no fear of betraying agathe's memory)
maria: beautiful, young and fresh-faced, fell out of a boat and stood there dripping wet while ripping into him, smells like soapy flowers, rainbows and unicorns. deliciously dangerous and perhaps a bit unnerving (nun in training, for the first time, he didn't think about agathe at all).
and... nether regions.

The first shot he it totally checking out her ass. He also gives her the once over earlier, in front of the puppet stage. Then when Elsa cuts in and throws the figurative bucket of water on him, he starts wiggling the fingers.
The second one he is looking at her like he wants to rip that dress right off her. She is looking back like she wouldn't mind one bit.
but yeah, he's also thinking all those yummy things that augies_annie and lemacd wrote about above.
So. Yummy.

Also expecting eight people for dinner. But when they are gone, and the dishes are done, I'm going to look for the screencap of that earlier checkout in front of the puppet stage. Unless one of you finds it first.
Small point of dispute: she doesn't have much of a caboose, our girl.

as for nether regions - I am endlessly fascinated by this between him and Elsa. I mean, I know we already talked it to death, plus voted on it! He doesn't seem to be a user or the type to do it just to do it, ya know? He's pretty passionate, and if he isn't feeling the passion....

So this is the first time he claps eyes on her in a dress that is not dowdy, but which delicately draws his eye to the slenderness of her waist and from there to the rest of her appealing anatomy (as demonstrated by his gaze when he stops to allow her through the door before him).
This move, I think we have discussed before, is unusual because I think normally a Governess would be expected to walk behind the Master of the House, so the fact that he makes a point of letting her through first, shows her he respects her (and also allows him the chance to Peruse The Goods at leisure, without Elsa seeing him do it). Elsa (from memory) pulls a face when she sees him letting Maria through.
If you look carefully, you can see him eyeing Maria until he closes the door behind him - undoubtably with the Captain's natural resources expressing their approval all the way...

That dreamy look says it all. yes, dreamy look, but do we think she's really crushing on him like any young woman would? maybe. sometimes I write her as someone who's had boyfriends, been kissed, etc. but another part of me is drawn to the idea that she doesn't quite even realize what's happening to her.
